Mom's Banana Loaf

 


Ingredients

2 ripe bananas
2 1//2 cups all purpose flour
3/4 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter or margarine
1 1/2 cups sugar
2 eggs
2 teaspoons grated orange rind
1/4 cup plain yogurt or buttermilk
1 1/2 teaspoons vanilla

Directions

Mash bananas, it should be at least 1 cup.
Sift flour, baking soda, baking powder and salt together.
In a separate bowl beat butter and sugar until light and fluffy. Add one egg at a time and beat well after each addition. Slowly blend in flour mixture, mashed banana and the remaining ingredients. Beat until smooth.
Pour into a well greased 9x5x3 inch loaf pan. Bake for 1 hour at 350℉.
