Date Coconut Balls
Ingredients
1 cup pitted dates
1/4 cup lightly salted butter
1 egg
1/2 cup light brown sugar
1 cup rice krispies
1/2 cup finely chopped pecans
1/4 cup shredded coconut
Directions
In a medium saucepan mix dates, butter, egg and sugar. Cook over moderate heat for 5 minutes, stirring constantly until mixture is smooth and thickened. Remove from heat and stir until cooled, about 5 minutes. Stir in cereal and nuts. With buttered hands, roll rounded teaspoonfuls of the mixture into balls. Roll balls in coconut.
