Double Stuff Oreo Cheesecake
This recipe is from Brittany, a former boss of mine in Las Vegas. She gave me her recipe specifically for the crust when I complained that my Oreo cheescake crust recipe could stand improvement.
Ingredients
Crust
2-3 cups crushed Oreos (about 1.5 packages of double stuffed Oreos)
5 Tbsp butter, melted
Filling
2 lb cream cheese, room temperature
1 1/3 cup granulated sugar
2 tsp vanilla extract
2/3 cup whipping cream
4 large eggs
10 double stuffed Oreo cookies, chopped
Directions
Crust
Preheat oven to 350 degrees F. Butter edges of spring form pan. Finely grind cookies. Put crumbs in a large bowl and stir in melted butter and mix until evenly distributed. Put the crumbs in the bottom of the pan and press into an even layer. Bake for 10 minutes. Allow to cool. Reduce oven temperature to 300 degrees.
Meanwhile, boil 2-3 cups of water for the water bath. Once your pan is cool, wrap heavy aluminum foil around the bottom and sides to prevent leakage while baking.
Filling
Cut the cream cheese into chunks and place in the bowl of an electric mixer. Mix on medium speed for 4 minutes until smooth, soft and creamy. Add sugar, beat for 4 minutes. Add the vanilla, beat for 4 minutes. Add the whipping cream, beat for 4 minutes. Add the eggs one at a time and beat until incorporated. Add the chopped Oreos. Pour the filling into the springform pan on top of the cooled crust. Smooth the top with a rubber spatula.
Water Bath Cooking Instructions
Place pan into a larger deeper (at least 3 inches) baking pan. It should fit in easily. Pour boiling water into the larger pan about halfway up or 1 1/2 inches deep. Place in lower rack of oven. Bake for 30 minutes at 300 degrees F.
Turn off oven and open the oven door and rest for 30 minutes. Close the oven and bake for 30-40 minutes at 300 degrees. Turn off the oven and let it cool in the oven for an hour. Remove from oven, then remove foil. Cool at room temperature on a cooling rack with foil on top to slow the cooling process. Place in the refrigerator for at least 4 hours. Remove foil, release sides of pan and remove the cheescake. Leftover cookie crumbles may be sprinkled on top.
Notes:
Dec 2014 Used 1 package and 1 row Oreo double stuff and 5 Tbl melted butter. It was a lot of crust, more than the filling needed. Next time I would try 1 package only.
Dec 2015 I used 1 package Family Size regular Oreos (20 oz) still too much crust.
