Soft Pumpkin Chocolate Chip Cookies



These pumpkin chocolate chip cookies are perfect for those of us who love all things pumpkin pie and chocolate. These cake-like cookies are always a big hit. I think they taste best when they are cold from the refrigerator.

Ingredients

  • 1 cup canned pumpkin

  • 1 cup white sugar

  • ½ cup vegetable oil

  • 1 large egg

  • 1 teaspoon baking soda

  • 1 teaspoon milk

  • 2 cups all-purpose flour

  • 2 teaspoons baking powder

  • 2 teaspoons ground cinnamon

  • ½ teaspoon salt

  • 2 cups semisweet chocolate chips

  • ½ cup chopped walnuts (Optional)

  • 1 tablespoon vanilla extract

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a baking sheet.

  2. Combine pumpkin, sugar, oil, and egg in a large bowl. Dissolve baking soda into milk in a small bowl and stir in.

  3. Stir together flour, baking powder, cinnamon, and salt in a separate bowl. Add flour mixture to pumpkin mixture and mix well. Add chocolate chips, walnuts, and vanilla; stir just to combine.

  4. Drop by spoonful on the prepared cookie sheet and bake in the preheated oven until lightly brown and firm, approximately 10 minutes.

Notes

Funny thing about these cookies. I got the recipe from the woman who did our laundry through Sudshare for a short time. She was a hot mess always late and asking for extensions. But once she tried to make up for it with these cookies. They were so delicious I asked her for the recipe. 

This one I found online is pretty close with these few differences:
1. She only used one teaspoon cinnamon instead of two.
2. She added vanilla only one teaspoon to the milk and baking soda then added mixture just before the chocolate chips. The mixture is very THICK!
3. She omitted the walnuts.
4. Baked at 375 degrees for 10-12 minutes.
