Pancit

 


Often served for special occasions like Noche Buena or birthdays, pancit is a Filipino dish of stir-fried noodles, meat and vegetables coated in a savory-sweet sauce. Pancit, which means “noodles”, has many delicious variations. This one, made with ramen noodles, carrots, onion, celery, green beans, snap peas, cabbage, and chicken or pork or shrimp. 

INGREDIENTS

Yield:6 servings
  • 4-6tablespoons oyster sauce
  • 2 tablespoon granulated sugar
  • 4 tablespoons water
  • 2 teaspoon cornstarch
  • 1pound boneless, skinless chicken breasts, cut into bite-size pieces or pork or shrimp
  • 1 tablespoon oyster sauce
  • 1 tablespoon cooking oil
  • 1/2 head garlic, finely chopped
  • 1mediumyellow onion, chopped
  • 2-3 stalks of celery, diagonally sliced
  • 2-3medium carrots, scrubbed or peeled, diagonally sliced
  • 1 cup green beans, thinly sliced (frozen, French cut)
  • 1 cup snap peas
  • 1/2 head shredded green cabbage (about 8 ounces)
  • 5 packages of ramen noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil

  • In a small saucepan, mix oyster sauce, sugar, water & corn starch, whisk until smooth. Cook until it thickens to a gravy like consistency.
  • If adding a meat, chop chicken or pork into bite size pieces. Marinate in 1 tablespoon oyster sauce. Heat oil in frying pan, add meat, cook until lightly brown.
  • In a large dutch oven over medium heat, saute garlic in oil. Don't allow the garlic to brown. Add onions and sweat until soft. Add carrots and celery and cook until soft. Add beans, peas and cabbage (shrimp if using). Saute for a few minutes until cabbage is soft.
  • Meanwhile cook noodles in boiling water, stir with fork to separate. Drain in a colander. Put noodles in a bowl, toss with soy sauce and oil and mix thoroughly.
  • Add noodles to the vegetables and gradually add the oyster gravy and mix thoroughly. Toss in the pan under low heat. Add soy sauce to taste.
