Mini Pecan Pies
Ingredients
1 3 ounce package of cream cheese, softened
1/2 cup butter
1 cup flour
3/4 cup brown sugar
1 1/2 teaspoons vanilla extract
3/4 cup broken pecans
1 egg, beaten
1 tablespoon butter, soft
Dash of salt
Directions
Blend cream cheese and butter. Stir in flour. Chill for one hour. Shape dough into 24 inch balls. Flatten into rounds and place in an ungreased muffin pan.
Beat egg, brown sugar, 1 tablespoon butter, vanilla extract and salt until smooth. Put pecans evenly into shells.
Bake at 325℉ for 20-25 minutes.
